FLANK STEAK WITH SPICY MARINADE RECIPE

Ingredients:
1- 1 1/2 lbs lean flank steak
1/3 cup dry red wine
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon water
1 teaspoon dried whole basil
1/2 teaspoon fennel seeds
1/2 teaspoon dried whole oregano
1/2 teaspoon dried whole thyme
1/4 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground red pepper

Trim fat from the steak. Place the steak in a large shallow dish. Combine wine,
lemon juice, Worcestershire sauce, water, basil, fennel seeds, oregano, thyme, salt,
allspice, and ground red pepper. Pour over the steak. Cove and marinate in the
refrigerator for 24 hours, turning occasionally.

Remove steak from the marinade. Place marinade in a small sauce pan and bring
to a boil. Boil for 5 minutes. Coat a broiler pan with vegetable cooking spray and preheat
broiler. Place the steak on the broiler pan and put in the oven close to the broiler.
Cook for 7-8 minutes on each side or until the desired doneness, remembering to
baste with the boiled marinade.
