CHICKEN & PASTA SOUP RECIPE

INGREDIENTS:

12 oz. boneless skinless chicken breasts, diced into cubes
2 tablespoons oil (vegetable, sunflower, etc)
1 medium onion, diced
1 1/2 cups diced carrots
9 oz. cauliflower florets
3 3/4 cups chicken stock
2 teaspoon dried mixed herbs
1 cup small pasta shapes
salt & pepper to taste
Parmesan cheese optional

Heat the oil in a large saucepan and quickly saute the chicken and vegetables until
they start to change color.

Next stir in the stock and the mixed herbs. Bring this mixture to a boil, then add the pasta
shapes. After adding the pasta bring the mixture back to a boil. After the mixture reaches a boil,
then lower heat, cover, and simmer for about10 minutes. You will need to stir this
occasionally to separate the pasta shapes.

Add salt and pepper to taste. The optional Parmesan cheese can be added
