CHICKEN WITH CREAMY GRAVY RECIPE
Ingredients for chicken:
6 boneless, skinless breast halves
3/4 cup corn flakes cereal, crushed
1/2 teaspoon paprika
1/2 teaspoon poultry seasoning
1/4 teaspoon dried whole thyme
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons evaporated skimmed milk
Ingredients for creamy gravy:
1 tablespoon margarine
1 tablespoon all-purpose flour
1/2 cup evaporated skimmed milk
1/4 cup canned chicken broth
1 teaspoon dry sherry
1/4 teaspoon salt
1/4 teaspoon ground white pepper
2 tablespoon chopped fresh chives

Start by placing crushed cereal, poultry seasoning, paprika, thyme, salt, and pepper in a
shallow dish, stirring well to combine. In another dish, pour milk into a shallow bowl. Dip
the chicken breasts into the milk and then dredge in the cereal mixture.

Next place the coated chicken breast halves in a baking dish. Place in a preheated 350
degree
oven for about 30-35 minutes or until chicken is cooked thoroughly and no pink remains inside.

CREAMY GRAVY:During the last few minute of the chicken baking, melt margarine in a
sauce pan. Add flour and stir until smooth. Gradually add evaporated milk, chicken broth,
and sherry
and stir until smooth. Cook for 1 1/2 -3 minutes until thickened
stirring constantly. Add salt, pepper, and chives just before serving. Remove
chicken from the oven and put on a plate. Pour sauce over the chicken
and serve immediately.
