BUTTERSCOTCH CHEESECAKE RECIPE

3 packages (8 oz) cream cheese, softened
1/2 cup sugar
2 tablespoon all purpose flour
2 cups (10 oz bag) butterscotch chips
2 tablespoons milk
4 eggs
1 prepared graham cracker crust pie shell

Preheat oven to 350°F.

In a large bowl, beat cream cheese, sugar and flour on medium speed of
an electric mixer until blended and smooth. Add butterscotch chips and milk to
a small microwave safe bowl. Microwave on high for 1 minute and take
out to stir. If not completely melted and smooth, add back to microwave on high
for 15 second increments stirring after every 15 seconds until smooth.

Add butterscotch mixture to cream cheese mixture, blending together. Then one
at a time, add the eggs. Blend well after each egg added to the mixture. Pour into
the prepared graham cracker crust.

Bake 40 to 45 minutes. Cheesecake should be almost set in the center. Remove
from oven to cool on a wire rack. Cool completely before serving.

Garnish with chocolate drizzle or whipped topping and butterscotch ice cream
