CRAB CAKES RECIPE
Ingredients:
2 large potatoes, peeled & chopped into large pieces
½ teaspoon ground turmeric
3 scallions, finely chopped
1 green chili, seeded and chopped
½ inch gingerroot, grated
2 tablespoons chopped cilantro
grated rind of 1 lemon
juice of 2 lemons
7 oz can of crabmeat, drained and flaked
salt and pepper to taste
Directions:
In a large pan of salted water, boil the potatoes until they become tender when poked with
a fork. Drain and add potatoes to a large bowl. Using a fork or a potato masher, mash the
potatoes but leaving some lumps. Next add the turmeric, green chili, scallions, gingerroot,
cilantro, lemon rind, and the lemons juice. Add the drained crabmeat and mix well.
Add salt and pepper until desired taste is reached.
Using your hands, shape the potato and crab mixture into round balls and then flatten
into patties. Heat a small amount of oil in a wok or large skillet over a medium high heat.
Add the potato crab patties to the hot oil in a single layer. Do not add too many at
once. Cook around 2-3 minutes and turn the patties over and repeat on the other side
until they are golden brown and slightly crisp. Continue until all the
patties are cooked.
Serve these warm with a
dipping sauce or a chutney.
