GARAM MASALA RECIPE

2 bay leaves, crumbled
2 cinnamon sticks, broken in half
8 green cardamom pods (seeds only)
2 tablespoons cumin seeds
1 1/2 tablespoons coriander seeds
1 1/2 teaspoon black peppercorns
1 teaspoon cloves
1/4 teaspoon ground cloves

Heat a dry skillet over high heat until hot. Then reduce the heat to medium, add the bay leaves,
cinnamon sticks, cardamom pods, cumin seeds, coriander seeds, peppercorns, and cloves.
Stir constantly, until the cumin seeds look dark golden brown and you can smell the aromas of the
spices strongly.

Remove the pan from the heat. Pour spices into a bowl to cool. Once cooled, use a spice grinder
or coffee grinder to grind the spices into a fine powder. Stir in the ground cloves after
making the powder.
