GUJARATI CARROT SALAD RECIPE

Ingredients:
1 lb carrots, peeled
1 tablespoon vegetable oil
½ tablespoon black mustard seeds
½ tablespoon cumin seeds
1 small clove garlic, minced
1 green chili, seeded and chopped
½ teaspoon sugar
¼ teaspoon salt
1 ½ tablespoon lemon juice

Directions:
Start by grating the carrots into a bowl and then set aside until needed. Heat the tablespoon
of oil in a wok or large skillet over a medium-high heat. Next add the mustard and also
the cumin seeds to the pan and cook. Stir this mixture and cook until the
mustard seeds start popping. Immediately remove the pan from the heat and add in the
following: minced garlic, green chili, sugar, and salt.  Let this mixture cool for
about 4-5 minutes.  Then pour the spice mixture over the carrots and add in the lemon
juice.  Toss together until carrots are coated in the oil and spice mixture.
Cover and refrigerate for around 30 minutes
