LAMB KABOBS RECIPE - KEBABS

Ingredients:
1 lb ground lamb
1 onion, grated
3 tablespoons cilantro, chopped
2 tablespoons fresh mint, chopped
3 tablespoons besan or gram flour
1 ½ tablespoons ground almonds
1 inch gingerroot, grated
3 tablespoons lemon juice
2 tablespoons plain yogurt
2 teaspoons ground cumin
2 teaspoons ground coriander
1 ½ teaspoon salt
2 teaspoons garam masala
½ teaspoon cinnamon
salt and pepper, as desired

Directions:

In a large bowl combine all the ingredients together. Use your hands to mix all the ingredients
thoroughly together.  Using a dish towel, cover the bowl and let stand for about 40 minutes
at room temperature.

Next using your hands, divide the lamb mixture into 22-24 equal balls. Working with one
ball at a time, work the lamb mixture around metal skewers in an oval or cylinder shape. 
Continue until all the lamb mixture is used up and the skewers are full. 

Preheat the broiler on the oven to 450˚F.  On a broiler pan spray with cooking spray. Next
add the skewers and broil for about 6-8 minutes, turning frequently to ensure even cooking. 
Cook until the lamb is completely cooked thru showing no signs of pink inside
when poked with a knife.  Serve immediately or serve warm.
