BEEF ENCHILADAS RECIPE

Ingredients:
1 lb ground beef
1 small minced onion
1/2 tsp cumin
1/2 tsp oregano
1 small can diced green chilies
2 tablespoons vegetable oil
1 1/2 cup shredded cheddar cheese
3 cups enchilada sauce
8 corn tortillas
more oil for frying tortillas

Start by sauteing the ground beef and minced onion in a skillet until meat is browned and onions are soft. Drain off excess oil from the beef and return to pan. Add cumin, oregano, diced green chilies, and 1 1/2 cups enchilada sauce to the cooked beef mixture. Set on low heat and simmer for 15 minutes.

Meanwhile, heat 1/2 inch oil in a skillet and fry the corn tortillas for about 15-20 seconds on each side. Remove from the hot oil and drain off excess.

Now take a tortilla and dip it in the remaining enchilada sauce and add a little cheese to the tortilla. Then fill the tortilla with the beef mixture and roll. Place the tortilla into a baking dish with the overlapped side down. Finish the remaining tortillas dividing the beef mixture among them. Pour the remaining enchilada sauce over the tortillas and bake at 350 degrees for around 15 minutes. Remove from the oven and sprinkle with remaining shredded cheese. Return to the oven for 3-5 more minutes until cheese is melted. Serve hot.
