BLACK BEAN NACHOS RECIPE

Ingredients
4 cups tortilla chips
1 cup canned black beans, rinsed and drained
½ cup salsa
2 cups shredded Monterey Jack or shredded cheese of choice
½ cup shredded lettuce
¼ cup sour cream (optional)
½ cup roasted red sweet peppers, cut into thin strips
2 to 4 tablespoons fresh or canned sliced jalapeno peppers, drained

 

 Directions
Start by arranging tortilla chips in one layer, slightly overlapping, on an ovenproof platter.

Now in a medium saucepan combine the black beans and the ½ cup salsa; cook and stir over
medium heat just until heated through. Remove from heat and then spoon bean mixture over chips.

Sprinkle cheese, sweet peppers, and jalapeno peppers over bean mixture on the bed of chips.
Bake in a 425˚F oven for approximately 3 to 5 minutes or until cheese is melted.
 After removing from the oven sprinkle with shredded lettuce and top with sour cream if desired.
