POACHED SALMON WITH PENNE RECIPE
Ingredients:
4-9 oz fresh salmon steaks
4 tablespoons butter
3/4 cup dry white wine
sea salt
8 peppercorns
fresh dill sprig
fresh tarragon sprig
1 lemon, sliced
1 lb dried penne
2 tablespoons olive oil
Lemon & Watercress Sauce
2 tablespoons butter
1/2 cup all-purpose flour
5 oz warm milk
juice and finely grated peel of 2 lemons
2 oz watercress, chopped
salt and pepper to taste

Start by putting the salmon in a large, non-stick pan. Add the butter, wine, pinch of sea
salt, the peppercorns, dill, tarragon, and lemon. Cover, bring to a boil, then simmer
for 10 minutes.Carefully remove the salmon from the pan. Strain and reserve
the cooking liquid. Next remove and discard the salmon skin and the center bones.
Place on a dish and keep warm.

Next, cook the penne pasta as directed adding 1 tablespoon of oil. After cooked,
drain and place on plate and top with warm salmon steaks.

For the sauce: Melt the butter and stir in the flour for 2 minutes. Stir in the milk and about
5-7 tablespoons of the reserved cooking liquid. Add the lemon juice and peel and cook,
stirring constantly, 10 more minutes. Next add the watercress to the sauce, stir
gently, and season
to taste with salt and pepper. Pour the sauce
over the salmon steaks.
